Recipe: Minted lamb, watermelon and quinoa salad!

This salad is the perfect all-in-one meal… Enjoy the beautiful flavours of the juicy lamb with the sweet and fruity watermelon and mint!

Ingredients

  • 250g diced lamb back straps (chopped into bite sized pieces)
  • 1 large bunch of fresh mint
  • 1 tub natural yoghurt
  • 1/2 watermelon (chopped into bite sized pieces)
  • 2 generous handfuls of rocket
  • 1 cup of quinoa
  • 120g crumbled fetta
  • 1/2 cup pitted and diced kalamata olives

 

Method

  1. Bring 1 cup of water to the boil and pour quinoa grains in. Let it sit to absorb the water and fluff up with a fork after 15 minutes.
  2. Finely dice half the mint and press into lamb lightly rubbed with olive oil. Sear lamb on a barbeque or grill for 8 minutes on each side.
  3. Combine watermelon, olives, rocket and fetta in a bowl and mix well.
  4. Combine the yoghurt with the remaining mint (chopped coarsely) and mix well.
  5. Layer plates or bowls with firstly quinoa, then the watermelon salad and then the pieces of lamb. Garnish with the minted yoghurt to serve.
  6. Enjoy!
