One-Pot Lasagne Soup — Plus Your Chance to Win Cuisinart Cookware

If you love traditional lasagne but don’t always have the time to layer and bake it, this hearty lasagne soup delivers all the same comforting flavours in a fraction of the time. Rich beef mince, tomatoes, herbs, tender pasta and plenty of melted cheese come together in one pot for an easy family dinner that’s perfect for chilly evenings.

Lasagne Soup

Serves: 4–6

Ingredients

1 tbsp olive or vegetable oil
500g beef mince
1 small brown onion, finely diced
2 garlic cloves, crushed
2 tbsp tomato paste
400g can diced tomatoes
750ml–1L chicken stock
1 tsp dried oregano
1 tsp sea salt
½ tsp cracked black pepper
4 lasagne sheets, broken into bite-sized pieces
60g mozzarella, grated
30g parmesan, finely grated
1 tbsp fresh basil, chopped
1 tsp sugar (optional)
¼ cup ricotta, to serve

Method

Heat the oil in a large saucepan from the Cuisinart 13-piece ClickSmart Non-Stick Detachable Handle Cookware collection over medium heat. Add the beef mince and onion, cooking for 5–7 minutes until the beef has browned and the onion has softened, breaking up any large pieces as it cooks.
Stir in the garlic and cook for another minute until fragrant.
Add the tomato paste, diced tomatoes, oregano, salt, pepper and 750ml of the chicken stock. Stir well and bring to a gentle boil.
Add the broken lasagne sheets and reduce the heat to a simmer. Cook for 10–12 minutes, stirring occasionally, until the pasta is tender. Add a little extra stock if the soup becomes too thick.
Stir through the mozzarella, parmesan and fresh basil until the cheese has melted into the soup. Taste and adjust the seasoning if needed. If the tomatoes are particularly acidic, stir through the sugar.
Ladle into bowls and top with a spoonful of ricotta, extra parmesan and fresh basil before serving.
