These delicious little oat bite biscuits are the perfect morning or afternoon tea accompaniment to a cuppa.
I really liked the blend of orange, lemon and cardamom flavours. The honey and raisins give a delightful sweetness.
Makes 10-12.
Ingredients
3–5 cardamom pods, to taste
300g oats
6 tbsp honey
Finely grated zest of 1 unwaxed lemon, plus juice of 1⁄2 lemon
Finely grated zest of 1 unwaxed orange, plus juice of 1⁄2 orange
2 tbsp chia seeds
3 tbsp coconut oil, melted
2 tsp ground cinnamon
6 tbsp plant-based milk (I used oat milk)
40g raisins
Method
Preheat the oven to 200C/180C fan-forced. Line a baking tray with baking paper.
Crush cardamom pods with the side of a knife. Take the seeds out and grind with a mortar and pestle.
Place 200g of oats into a food processor and blitz for 30 seconds, or until they form a flour.
Place ground cardamom and ground oats in a large bowl and add remaining ingredients, including the remaining 100g of oats. Stir well until a nice sticky mix forms. Your mixture should be damp, not runny or wet.
Scoop 1 tablespoon of mixture into your hand and roll into a ball. Place it on the prepared tray and flatten. Repeat to make up to 12 biscuits.
Bake for 20-25 minutes. Leave on tray to cool completely, they will firm up, then serve.
