If you’ve noticed “hot honey” popping up on restaurant menus, in supermarket aisles and across social media lately, you’re not imagining it – it was officially named the most-searched recipe trend worldwide last year, and it shows no signs of slowing down. The appeal is simple: a drizzle of chilli-infused honey turns anything from pizza to fried chicken into something with a genuinely addictive sweet-and-spicy kick. This Hot Honey Chicken brings the trend home in the easiest possible way, with crispy pan-fried chicken thighs glazed in a sticky, golden sauce that balances real heat with real sweetness. It’s simple enough for a weeknight, but impressive enough that nobody needs to know how little effort it took.
Hot Honey Chicken
Serves 4 | Prep: 10 minutes | Cook: 20 minutes
Ingredients
For the chicken:
6 boneless, skinless chicken thighs
1/2 cup plain flour
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper, to taste
2 tablespoons olive oil
For the hot honey sauce:
1/2 cup honey
1–2 tablespoons hot sauce (such as Frank’s or sriracha, adjust to taste)
1 teaspoon chilli flakes
1 tablespoon apple cider vinegar
1 tablespoon butter
Pinch of salt
To serve:
Fresh parsley or chives, chopped
Lemon wedges
Method
In a shallow bowl, combine the flour, garlic powder, smoked paprika, salt and pepper. Coat each chicken thigh evenly in the seasoned flour, shaking off any excess.
Heat the olive oil in a large frying pan over medium-high heat. Add the chicken thighs and cook for 5–6 minutes on each side, until golden, crispy and cooked through.
Remove from the pan and set aside.
While the chicken cooks, make the hot honey sauce. In a small saucepan over low heat, combine the honey, hot sauce, chilli flakes, apple cider vinegar and a pinch of salt. Stir gently and let it warm through for 2–3 minutes — don’t let it boil, as this can make the honey bitter.
Remove the sauce from the heat and stir through the butter until melted and glossy.
Return the cooked chicken to the pan (or plate it up first), then generously drizzle over the hot honey sauce, turning the chicken to coat evenly.
Scatter with fresh parsley or chives and serve immediately with lemon wedges on the side, alongside steamed rice, crusty bread or a simple green salad.
Tips
Control the heat by adjusting the hot sauce and chilli flakes — start lower if you’re unsure, as you can always add more, but can’t take it away.
This sauce works brilliantly on more than just chicken — try it drizzled over pizza, roasted vegetables, or even a simple fried egg on toast.
Chicken breast can be used instead of thigh, but keep a close eye on cook time so it doesn’t dry out.
Extra sauce keeps well in an airtight jar in the fridge for up to two weeks, ready to drizzle over whatever needs a bit of sweet heat.
