Comforting lemon and herb fish rissoles

Boasting a healthy, budget-friendly ingredients list, these yummy rissoles can be served up with a salad, or added to a delicious burger with a dollop of tartare sauce and some leafy greens. Enjoy!

Serves 4

Ingredients

  • 750g boneless white fish fillets, roughly chopped
  • 1 small lemon, juiced
  • 1 egg
  • 4 green onions, thinly sliced
  • 1/4 cup dill leaves, finely chopped
  • 2 tbsp finely chopped chives
  • 1/3 cup plain flour
  • olive oil cooking spray

Method

  1. Combine fish, 2 tablespoons lemon juice and egg in a food processor. Process until mixture is minced. Transfer to a large bowl.
  2. Add green onions, dill, chives and flour. Season with salt and pepper. Using clean hands, mix until well combined.
  3. Take 2 heaped tablespoons of mixture at a time and roll into 16 balls. Flatten slightly. Place rissoles on a plate. Cover and refrigerate for 30 minutes, if time permits.
  4. Preheat a barbecue plate on medium-low heat. Spray both sides of rissoles with oil. Cook rissoles, turning occasionally, for 6 to 8 minutes or until cooked through. Serve with dipping sauce.
