Fruity curry and rice

Everyone loves a good curry and rice. It’s hearty and filling, offering a warm sensation that’s comforting to both the body and the soul. Whether you’re laying low this storm season or stretching out comfortably in the sanctuary of your air-conditioned home, this fruity variant of the classic curry-and-rice dish is a great way to keep yourself sated and energised.

Ingredients

  • 400g steak, diced
  • 1 tablespoon low-fat spread
  • 1 tablespoon plain flour
  • 1 onion, chopped
  • 1/2 apple, chopped
  • Pinch of ground pepper
  • Pinch of salt
  • ½ tablespoon sultanas
  • ½ tablespoon curry powder
  • ½ tablespoon chutney
  • ½ cup water
  • Juice of one lemon

Method

  1. Fry onion and apple in low-fat spread until transparent.
  2. Add beef and curry powder and fry until meat is brown.
  3. Add flour and brown further.
  4. Pour in water and add chutney, sultanas, salt, pepper and lemon juice.
  5. Bring to the boil and simmer for two minutes.
  6. Serve on white/brown steamed rice.
