I have a strong dislike for waste. In recent years I’ve really upped my recycling game, but I’ve also started meal planning and only buying items my family really needs. I was having a whinge to a friend about breakfast cereals recently and specifically that the crushed up bits of Weet-Bix tend to go to waste in my house because no one enjoys eating them. Such a ‘first world problem’.
She thrust this recipe in my direction. It’s perfect because it uses up those scrappy bits of Weet-Bix and creates some delicious lemon squares.
