Delicious and simple, this classic jam drops recipe is an old favourite everyone loves.
Adding a gluten-free spin, these melt-in-the-mouth jam drops are only made up of five ingredients including butter, sugar, vanilla essence, gluten-free flour and raspberry jam — it’s that simple!
And the best part is, it’s super quick to whip up and is a handy recipe to have on hand for those gluten-intolerant visitors. A great afternoon treat, store any leftovers in an airtight container in the fridge. Enjoy with a cuppa and dig in!
Ingredients
- 150g unsalted butter, softened
- 1/3 cup caster sugar
- 1 tsp vanilla essence
- 1 1/2 cups gluten-free plain flour
- 1 1/2 tbsp raspberry jam
Method
- Preheat oven to 180°C and grease two baking trays, line with baking paper.
- Using an electric mixer, beat butter, sugar and vanilla until light and fluffy.
- Add flour, beat to combine.
- Roll one level tablespoon of mixture into ball. Repeat with remaining mixture to make 18 balls.
- Place balls, 4cm apart, on trays. Using the palm of your hand, flatten each ball slightly.
- Shape edges to remove any cracks.
- Make an indention in the centre of each biscuit. Fill with 1/4 teaspoon jam.
- Baking for 15 minutes, swapping trays halfway.
