Comforting slow cooker beef and red wine casserole

Looking for a comfort food to enjoy for dinner this week to help you warm up on those cool winter nights? Why not give this mouthwatering and incredibly simple beef and red wine dish a red hot go!

With just a handful of super simple ingredients, this quick dinner is not only perfect for those who are time poor as they can just throw it in the slow cooker and let it work its magic, but it’s also perfect for those on a budget! You can serve this up to family and friends or enjoy all on your own throughout the week. Yum!

Ingredients

  • 1kg chuck beef steak, cut into pieces
  • 2 tbs plain flour
  • 2 tbs oil
  • 2 garlic cloves minced
  • 1 onion diced
  • 2 tbs tomato paste
  • 400g canned crushed tomatoes
  • 2 carrots diced
  • 1 capsicum diced
  • 500g green beans cut into pieces
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tbs Worcestershire sauce
  • 1 pinch seasoning *to taste

Method

  1. Cut steak into 2.5 cm cubes. Coat beef cubes on all sides in plain flour.
  2. Heat fry pan over medium high heat. Add oil. Add beef. Cook until browned.
  3. Add all ingredients including cooked beef into bowl of the slow cooker and cook on high for 4-6 hours or low for 6-8 hours. Serve.
