The warmer months are perfect for barbecuing. I love the aroma of food being grilled on the barbecue, the smoke in the air, a cold drink in one hand, metal tongs in the other.
My husband is a dab hand at roasting meat on the barbie, and I am partial to a big of roast pork. We tried something a bit different recently, grilled tahini pork skewers. I’d seen a similar recipe online and thought, ‘why not?’ It’s an easy, healthy barbecue pork recipe.
The flavour is interesting. The tahini marinade gives the pork everything it needs. You can even use the leftover marinade as a dipping sauce if you want.
Serves 4.
Ingredients
- 1/2 cup tahini
- 1/2 cup coconut milk
- 2 tbsp fish sauce
- 1 tbsp honey, plus more for serving
- 2 tbsp lime juice
- 1 tbsp sesame oil
- 800g boneless pork, cut into strips or cubes
- 1 red bird’s eye chilli , thinly sliced
- 1/3 cup of salted peanuts , chopped
Method
- Combine tahini, coconut milk, fish sauce, honey, lime juice and sesame oil in a small bowl and whisk to combine.
- Place pork in another bowl and pour half of the tahini mixture over the pork and stir to coat. Let the pork marinate for 15 minutes.
- Preheat grill to medium heat. Thread pork onto skewers and grill for about 2-3 minutes per side or until pork is cooked through.
- Serve drizzled with honey and topped with chilli, and peanuts.
