There’s nothing else quite as delicious and reliable as this classic banana loaf recipe! And although the original is definitely hard to beat, this nutty version will definitely leave you wanting more!

This addictive cream cheese icing is the perfect topping to this moist base. And don’t worry if you’re struggling to finish it all in one go as you can just wrap it up once it’s baked and pop it in the freezer for later! Enjoy!

Ingredients

• 125g butter
• 1 cup raw sugar
• 1 egg
• 3 or 4 mashed bananas
• 2 cups plain flour
• 1 tsp baking powder
• 1 tsp bicarb soda
• 1/2 tsp salt
• 1/2 cup chopped walnuts
  Icing
• 50g butter, softened
• 75g cream cheese
• 1 cup icing sugar
• 1/4 cup chopped walnuts (optional)

Method

1. Beat butter and sugar together until light and fluffy. Thoroughly mix in egg and mashed bananas. Add flour, baking powder, bicarb soda, salt and chopped nuts. Make sure to avoid over-mixing.
2. Line base of large loaf tin with baking paper. Pour in mixture. Bake at 180C for 50 mins. After cooling, turn out onto wire rack.
3. Meanwhile, mix together butter and cream cheese until creamy. Beat in icing sugar. Spread over top of cake and sprinkle with walnuts.
