If you’ve never tried making an omelette in the air fryer, it’s about to become your new favourite way to start the day. No standing over the stove, no anxious flipping, and no risk of a soggy, undercooked centre – just pour, set the timer, and let the air fryer do the work while you get on with the rest of your morning. This Mediterranean-inspired variation swaps the classic ham and cheese for spinach, feta, sun-dried tomato and fresh herbs, giving you a lighter, more vibrant take on the original that’s just as easy and even more satisfying.
Mediterranean Air Fryer Omelette
Serves 1–2 | Prep: 5 minutes | Cook: 10 minutes
Ingredients
3 large eggs
1 tablespoon milk or cream
Salt and black pepper, to taste
1 teaspoon butter or olive oil
1/2 cup baby spinach, roughly chopped
1/4 cup sun-dried tomatoes, chopped
40g feta, crumbled
1 tablespoon chopped fresh parsley or basil, plus extra to serve
Pinch of dried oregano
Method
Preheat your air fryer to 180°C with a small, heatproof, non-stick pan or cake tin placed inside – a round pan will give you a more traditional omelette shape. Add the butter or olive oil and let it heat for 30 seconds.
While the pan heats, whisk the eggs with the milk, salt and pepper for about 30 seconds, until slightly frothy — this helps create a fluffier omelette.
Stir the spinach, sun-dried tomatoes, parsley or basil and oregano through the egg mixture, reserving a little feta to sprinkle on top.
Carefully pour the egg mixture into the warmed pan, then scatter over the remaining feta.
Cook for 8–10 minutes, until puffed up, golden and set in the centre.
Carefully remove from the air fryer, scatter with a little extra fresh herb, and serve immediately, either on its own or alongside a simple side salad or slice of crusty bread.
Tips
Make sure any vegetables you add are pre-cooked or naturally low in moisture – raw, watery vegetables like fresh tomato can leave your omelette soggy rather than fluffy.
Whisking the eggs properly for a full 30 seconds genuinely makes a difference to the texture, incorporating air that helps the omelette puff up in the air fryer.
No sun-dried tomatoes on hand? Swap in roasted capsicum, olives, or a handful of mushrooms sautéed beforehand.
This method is easy to make your own — try swapping the Mediterranean flavours for crispy bacon and cheddar, or mushroom and swiss, using the same base technique.
