Home cooks are going nuts for this 4-ingredient slow-cooker Christmas cake

A home cook has made national headlines after they shared their recipe for a slow-cooker Christmas cake on social media. The recipe was shared on the Facebook group Slow Cooker Recipe & Tips, where it got a big thumbs up from followers.

The best part is, the cake requires just four ingredients: 1 kilogram of mixed fruit, 2 cups of chocolate milk, 1/2 to 3/4 cup of Baileys Irish Cream, and 2 cups of self-raising flour.

The super-easy method involves soaking the mixed fruit in chocolate milk and Baileys Irish Cream for at least 24 hours, then folding in the flour. Next, you line the bottom and sides of the slow cooker with two layers of baking paper. (The original post said to also add a long strip of baking paper, so it’s easier to pull out when cooked.) Then simply pour in the batter and cook on low for seven to eight hours. Voila!

The cook said it’s important to note that some slow cookers run hot and could be done within six hours, so it may be a good idea to keep a close eye on it.

They also suggested adding a tea towel under the lid. “The tea towel is to collect condensation that forms on the lid, keeping it from falling onto the cake and keeping the top dry,” they explained.

And if you’re wanting to punch up the flavour, the cook suggested adding a pack of glacé cherries to the fruit mix, saying, “The packet of glacé cherries are an additional option, but a very tasty one.”

Also, if you’re not a fan of Baileys Irish Cream, don’t be afraid to switch it with something else, like Stone’s Ginger Wine, or you can leave out the liqueur if you prefer.

The post received a slew of likes and comments, with fellow cooks saying they can’t wait to try it. It’s also been re-shared a number of times. “I made it yesterday!!” one wrote. “It looks just like that!” Another added, “Brilliant, will save it now.”
