Zesty lemon and coconut brownies

If you’re over all of the sickly-sweet dessert options and are looking for something a bit more refreshing, give these delicious brownies a red-hot go. These bright yellow slices are far from what you would picture when thinking about brownies, but with their mixture of delicious, light ingredients you won’t regret baking these mouthwatering treats!

Not only is the flavour incredibly unique and a guaranteed crowd-pleaser, but there’s only a handful of ingredients to worry about making it absolutely ideal for those on a budget or even those who are just kicking off their baking journey. Enjoy!

Ingredients

  • 250g butter
  • 2 cups caster sugar
  • 4 eggs
  • 1 1/2 cups plain flour
  • 1 cup desiccated coconut
  • 3 teaspoons finely grated lemon rind
  • 1/4 cup fresh lemon juice
  • Icing sugar, to dust

Method

  1. Preheat oven to 180C. Line 20 x 30cm (base measurement) slab pan with non-stick baking paper. Melt butter in saucepan over medium heat. Remove from heat. Stir in sugar. Add eggs 1 at a time, and stir until mixture is thick and glossy.
  2. Sift flour over egg mixture. Stir until well combined. Stir in coconut, lemon rind and lemon juice. Spread mixture over base of prepared pan.
  3. Bake for 30 minutes or until skewer inserted into centre comes out clean. Set aside in pan to cool completely. Slice into squares. Dust with icing sugar. Serve.
