Two-step baked banana porridge

Breakfast doesn’t have to just be about cereal or toast and getting creative in the morning can get your day off to a great start. With just five super simple ingredients and two easy steps, you can enjoy this warm and creamy banana porridge on a cool morning – and it’s sure to fill you up all day.

With just 30 minutes cooking and prep time, you can whip it up and pop it in the oven while you have a shower! If you’re looking to add something else to the delicious dish, try serving it up alongside a generous serving of creamy greek yoghurt topped with honey. Yum!

Ingredients

  • 2 small bananas, halved lengthways
  • 100g jumbo porridge oats
  • 1/4 tsp cinnamon
  • 150ml milk of your choice, plus extra to serve
  • 4 walnuts, roughly chopped

Method

  1. Heat oven to 190C. Mash one banana half in a mixing bowl. Add oats, cinnamon, milk, 300ml water and a pinch of salt. Stir to combine. Transfer to baking dish. Top with the remaining banana halves. Scatter walnuts over the top.
  2. Bake for 20-25 mins until the oats are creamy and have absorbed most of the liquid. Serve warm.
