This delicious carbonara recipe uses penne pasta instead of spaghetti to fill you up without the heaviness of the thick traditional carbonara. It’s perfect for dinner or lunch with minimal preparation yet a delicious outcome.

Ingredients
375g penne
20g butter
200g bacon rashers, rind removed, thinly sliced
300ml thickened cream
2 extra-large eggs, lightly whisked
1/3 cup (25g) shredded parmesan
1 tablespoon coarsely chopped chives
Method
- Cook the penne following the instructions on the back of the packet. Drain water and leave 1/4 cup of the cooking liquid.
- In a large frying pan on high heat, melt butter. Cook bacon and stir in until crisp for about 3-4 mins. Add cream and bring to boil. Turn heat to low, simmer and stir until the sauce is slightly thicker for 2-3 mins.
- Add the cooking liquid to the pan and take off heat. Add egg and parmesan and stir.
- Add the cooked penne to the sauce and mix in to combine. Transfer to serving plates and garnish with chives.
