Super-easy tuna and corn fritters

There’s nothing better than a dish that is low-cost, easy to make and good for your insides and that’s exactly what these fritters are!

Enjoy them with a side salad and a drizzle of sweet chilli sauce for the most delicious combo that tastes good at any time of the day. This no-fuss meal works perfectly for breakfast, lunch, dinner or even just a snack throughout the day. So what are you waiting for? Dig in!

Ingredients

  • 2 cups (240g) frozen corn kernels
  • 2 extra-large eggs
  • 2/3 cup (100g) self-raising flour
  • 1/4 cup (60ml) milk
  • 1 zucchini, trimmed, coarsely grated
  • 425g can tuna chunks, drained, coarsely flaked

Method

  1. Bring a saucepan of water to the boil. Cook the corn in the boiling water until heated through. Refresh corn under cold water. Drain well. 
  2. Add eggs to a large bowl and whisk. Gradually add flour and milk. Stir continuously until a smooth batter forms. Add corn and zucchini. Stir well. Season. Fold through tuna.
  3. Heat a large, non-stick frypan over medium heat. Pour 60ml or 1/4-cup portions of the mixture into the pan. Leave room to spread. Fry for 2-3 minutes or until fritters are golden underneath. Flip and fry for another 2 minutes or until cooked through completely. Transfer to serving plate. Repeat for entire mixture. Serve.
