Spanakopita is an iconic traditional Greek savoury pie made with a crispy, flaky phyllo dough exterior and a warm filling of spinach, feta cheese, onions, herbs, and olive oil. The name of this dish was derived from the Greek words spanáki (spinach) and píta (pie).
There are some variations on the dish, and when it contains a lot of cheese, it is sometimes specifically called spanakotiropita.
Notes: Use a chilled filo, like Antoniou Fillo Pastry, rather than frozen. If only frozen filo is available, thaw completely before you begin.
Pre-cutting the top of the spanakopita makes it easier to cut individual serves after it’s cooked without shattering the filo.
