This is a delicious mango dessert that is a perfect way to end a summer evening dinner with friends, and it’s incredibly easy to make too!
Ingredients
For the pudding
6 eggs
300g self-raising flour
4 mangos
100ml honey
A pinch of bi-carb soda
For the sauce
100g of unsalted butter
2 cups of sliced mangos
2 tbsp of honey
100ml of thickened cream
75g caster sugar
Method
Blend eggs, flour, 50mls honey and 2 mashed mangos until smooth. Line ramekins with slicked mango and add a spoonful of honey to the bottom.
Fill the ramekins with the blended ingredients halfway.
Place ramekins in a bain-marie or a tray filled halfway with water and bake at 180C for 45 minutes.
To make the sauce, melt butter in a saucepan. Add the sugar and mangoes and keep stirring. Once smooth, add the honey and cream and blend with a bar mix. Heat up and serve over steamed puddings when ready.
