How to make your own Easter Buns

Coming into Easter if you make buns for Good Friday or buy them, this is the alternative that is super quick and easy and never fails.

Ingredients

  • 1 packet Lubke rye bread mix
  • 1 ½ cups currents (I like lots of currents – alter if want more or less)
  • 2 x 7g packets dried yeast
  • 1 heaped teaspoon mixed spice
  • 1 heaped teaspoon brown sugar (to activate the yeast)
  • 2 teaspoons vanilla essence
  • 450 ml tepid water

Method

  1. Place yeast, spice, sugar, vanilla and water into a large mixing bowl.  
  2. Add flour and currents then knead with hand mixer with dough hooks until the mix is smooth and silky (about 3-4 minutes). 
  3. Place dough into a large lined deep cake or bread tin, place in a warm place to prove (inflate with the yeast). 
  4. When doubled in size place in a moderate oven and cook until brown on top and sounds hollow when tapped on top. 
  5. Remove from oven and wrap in a tea towel until cool (that is if you can keep everyone away from it that long). 
  6. Slice and eat with real butter. 

NOTE: If you want singular buns instead of putting whole mix into tin, break it up into smaller pieces & place around the tin making sure each piece touches the next.  You can then break off each bun after it is cooked & cooled.
