Delicious homemade ginger biscuits

The smell of freshly baked biscuits is enough to make anyone’s mouth water so why not give these delicious treats a go. By using a combination of fresh ginger, crystallised ginger and ground ginger, you’d be hard pressed to find biscuits with a more authentic taste than these!

Not only do they taste absolutely amazing but they’re incredibly easy to make, especially for any less experienced bakers who are looking to try something new in the kitchen. If you’re feeling a bit adventurous, feel free to play around with the recipe as well. Adding in chocolate chips will give the biscuits a bit of a sweet kick otherwise you can try dried cranberries for something a bit different. Enjoy!

Ingredients

  • 185g butter
  • 250g soft brown sugar
  • 1 large egg
  • 1/3 cup treacle
  • 2 cups plain flour
  • 3 teaspoons ground ginger
  • 2 teaspoons bicarb soda
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons grated fresh ginger
  • 50g finely chopped crystallised ginger

Method

  1. Add butter and brown sugar to a small bowl. Use electric mixer to beat until smooth and creamy. Add egg and treacle. Beat to combine.
  2. In a separate bowl, combine flour, ground ginger, bicarb soda and salt. Stir in dry ingredients to wet ingredients. Add fresh and crystallised gingers. Cover bowl and chill in refrigerator for 2 hours.
  3. Preheat oven to 180 C. Tear off sections of dough and shape into balls about 2-3cm wide. Place biscuits 5cm apart on lined baking trays. Bake for 10 minutes or until golden brown. Cool on wire racks. Serve.
