Delicious low-fat turkey bolognese

Turkey bolognese is an easy and healthy alternative to the classic beef sauce. Ground turkey is cooked with onion, carrot, celery, garlic, mushroom, spices and tomato puree.

Low in fat and full of flavour, this is a great, no-fuss weeknight meal for everyone to enjoy! While it’s best served fresh over your choice of pasta, you can also cook it up and freeze it for meals throughout the week. Delicious!

Ingredients

  • 400g lean turkey mince
  • 2 tsp vegetable oil
  • 1 large onion, chopped
  • 1 large carrot, chopped
  • 3 celery sticks, chopped
  • 250g pack of brown mushroom, finely chopped
  • Pinch of sugar
  • 1 tbsp tomato puree
  • 2 x 400g cans of chopped tomato with garlic and herbs
  • 400ml chicken stock

Method

  1. Heat a large non-stick frying pan and fry the turkey mince until browned. Tip onto a plate and set aside.
  2. Add the oil and gently cook the onion, carrot and celery until softened- about 10 minutes.
  3. Add the mushrooms and cook for a few minutes. Then add sugar and tomato puree, and cook for 1 minute more, stirring to stop it from sticking.
  4. Add the tomatoes, turkey and stock with some seasoning.  Simmer for at least 20 minutes until thickened.
