This traditionally French dessert is usually made with black cherries, although substituting apricots in the recipe works so well!
While this dessert looks and tastes incredibly gourmet, the recipe is actually fairly simple. Preparing the batter really is as easy as blending everything together in a bowl or blender and then pouring it into a dish.
This baked dessert works perfectly as an addictive after dinner treat to satisfy your sweet tooth without going over the top. If you’re serving it up for guests, pop a scoop of vanilla ice cream next to it to complement the sweet, fruity flavours. Enjoy!
Ingredients
- 9 regular size apricots, cut in half and pits removed
- 1/3 cup plain flour
- 6 tbsp sugar
- 2 tsp rum
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 2 eggs
- 3/4 cups thickened cream
- Pinch of salt
- Icing sugar for dusting
- Shaved almonds, to serve
Method
- Preheat oven to 180C degrees. Grease a 28cm x 25cm ovenproof baking dish.
- Arrange sliced apricot halves on bottom of dish to cover base completely.
- Add flour, sugar, rum, vanilla extract, lemon zest, eggs, salt and cream to a blender. Blend together to combine until mixture makes a thin batter.
- Pour batter over the apricots. Bake for 45 minutes or until clean skewer inserted into centre comes out clean. Leave to cool for 5 minutes. Dust icing sugar over top. Sprinkle with almonds. Serve warm or room temperature.
