Smoky bacon, spicy kimchi and gooey melted mozzarella make this a satisfying meal that’s quick enough for busy evenings but delicious enough to make again and again.

Kimchi Fried Rice

Serves: 2–4

Ingredients

1 medium onion, diced
200g bacon, diced
½–1 cup kimchi (adjust to your preferred spice level)
1–2 bowls cooked rice
1–2 tbsp gochujang (Korean chilli paste)
Mozzarella cheese
Optional garnish: chopped nori, sesame seeds and chives

Method

Preheat the oven to 180°C.
Heat a little neutral oil in a Cuisinart ClickSmart oven-safe pan over medium heat. Add the diced onion and cook until translucent.
Add the diced bacon and cook until lightly browned.
Stir through the kimchi and cook for 2–3 minutes.
Add the cooked rice and gochujang, stirring well until everything is evenly combined and heated through.
Sprinkle a generous layer of mozzarella over the top, then transfer the pan to the oven (after removing the detachable handle) and bake for 5–7 minutes, or until the cheese is melted and bubbling.
Garnish with sesame seeds, chopped nori and chives, if using, and serve immediately.
