Classic Lemon Drizzle Cake Recipe

Ingredients
For the cake

125 g unsalted butter, softened
175 g caster sugar
2 large eggs
Zest of 2 lemons
175 g self-raising flour
2–3 tbsp milk

For the lemon drizzle

Juice of 2 lemons
100 g caster sugar

Optional lemon icing (extra sweet finish)

120 g icing sugar
1–2 tbsp lemon juice

Method

Preheat the oven to 180°C (160°C fan) / 350°F. Line a loaf tin with baking paper.
Cream butter and sugar
Beat the butter and caster sugar together until light and fluffy.
Add eggs and lemon zest
Beat in the eggs one at a time, then mix in the lemon zest.
Fold in flour
Gently fold in the self-raising flour. Add milk until the batter has a soft dropping consistency.
Bake
Spoon the mixture into the prepared loaf tin and bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.
Make the drizzle
Mix the lemon juice and caster sugar together.
Soak the cake
While the cake is still warm, prick the top all over with a skewer and slowly pour the drizzle mixture on top. Let it soak in as the cake cools.
Optional icing
Mix icing sugar with lemon juice to form a thick glaze and drizzle over the cooled cake.
