Easy apple and rhubarb crumble

The perfect quick and easy dessert option.

If you are struggling to find a simple and easy dessert to serve at special events that will be a hit with the guests, then this recipe is what you are looking for. The apple and rhubarb crumble is best served warm with a generous scoop of ice cream to add some extra sweetness to the dessert.

It is definitely a crowd pleaser as the flavours of rhubarb and apple are absolutely delicious together. This quick and easy recipe won’t take much effort but it will produce a mouth-watering dessert!

Ingredients

  • 5 (750g) apples, peeled, cored, chopped
  • 1/3 cup caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon finely grated lemon rind
  • 6 rhubarb stems, trimmed, cut into 3cm pieces
  • 2 teaspoons plain flour
  • 1 cup rolled oats
  •  1/2 cup plain flour, extra
  • 1/2 cup firmly packed brown sugar
  • 80g butter, chilled, chopped
  • 1/4 cup flaked almonds
  • Icing sugar, to serve
  • Vanilla ice cream

Method

  1. Preheat oven to 180C or 160C fan forced. In a large saucepan over medium heat, add apple, caster sugar, cinnamon, lemon rind and 2 tablespoons of water. Cover and cook for 5 mins until apple starts to soften. Mix in rhubarb and flour. Cover again and cook for 3 mins until rhubarb softens.
  2. Transfer mixture to an 8-cup capacity baking dish.
  3. In a bowl mix together oats, extra flour and brown sugar. Rub butter into mixture with fingertips until it looks like breadcrumbs. Add almonds and stir. 
  4. Sprinkle oats mixture over rhubarb mixture. Place in oven and bake until golden for 35 mins. Set aside to cool for 5 mins.
