Budget bites: Roasted honey chicken pieces

Being thrifty doesn’t mean packing the pantry full of two-minute noodles and cooking up unhealthy meals. There are a number of recipes out there that deliver delicious, healthy and satisfying dishes at a lower cost. We’ve never been one to sacrifice taste and quality for the sake of saving cash!

This recipe for delicious roasted honey chicken is such an easy meal. We’ve used chicken pieces, but if you don’t like bones you can use chicken breasts and you just need to reduce your cooking time (otherwise it might get overcooked). A few of the other ‘selling points’ for this recipe: you’ll only need one dish for cooking, there are only four ingredients, you can freeze it for up to four months in an airtight container and you should be able to knock it all together for $5 or less.

Serves 4

Ingredients

  • 1kg chicken pieces
  • 1 packet French onion soup mix
  • 3/4 cup white wine or chicken stock
  • 3 tbsp honey

Method

  1. Preheat oven to 210C.
  2. Place chicken pieces in a baking dish.
  3. Mix together soup mix, wine (or stock) and honey and pour over chicken.
  4. Cover dish with foil and bake at 160C for an hour. Remove cover then bake at 200C for a further 10 minutes.

Honey chicken is great served with fried rice or steamed vegetables.
