Potato salads are quite easy to make but experimenting with different ingredients is all part of the fun. This great, tasty artichoke and potato salad is a winner!
Ingredients
650g potatoes
1/2 cup virgin olive oil
1 tbsp wine vinegar
1 tbsp lemon juice
1 anchovy fillet
1 tsp dijon mustard
salt and pepper
1 x 400g can artichoke hearts
4 shallots, thinly sliced
4 hard-boiled eggs
3 black olives, slivered
Method
Steam and dice potatoes
Combine oil, vinegar, lemon juice, mashed anchovy fillet and mustard in a bowl. Pour over potatoes and let cool.
When ready to serve, layer with chopped eggs, artichokes, shallots and slivered olives. Add whole olives when complete.
