These chocolate muffins are so easy to make, full of healthy ingredients and taste amazing! We know what you’re thinking… how can these chocolate muffins be grain free, gluten free, sugar free, sweetener free and even egg free but still taste delicious?! Only one way to find out…

Serves: 8

Stuff you need

  1. 1 1/2 cups almond meal
  2. 1/2 cup raw cacao powder
  3. 1 cup coconut milk
  4. 1/4 cup coconut oil melted
  5. 1/4 cup cacao nibs
  6. 2 tbs. chia seeds, soaked in 6 tbs. water for 10 minutes (OR 2 eggs)
  7. 1 tsp. 100% vanilla extract
  8. Pinch of salt

Now what

  1. Preheat oven to 180°C (350°F) and line a muffin tray with 8 muffin cases.
  2. In a large bowl combine the almond meal, cacao powder, cacao nibs and salt.
  3. Add the coconut milk, coconut oil, chia gel (or eggs), vanilla and mix well.
  4. Spoon the mixture in to the prepared muffin trays and place in to the oven for 20 minutes or until the muffins spring back when lightly touched.

    • REALY, get over yourself, life’s too short to be bothered with this sort of foolish crap.
      Besides anything that you make yourself is not going to be Halal. You clearly don’t know what Halal is.
      It’s not the recipe that is Halal, It seems you are one of those misinformed persons who are objecting to Halal certified products. What you need to be looking out for is non Halal certified ingredients if you want to jump on that bandwagon.

    • well stand up and be counted and do not support it, google what is really behind. here is some information halal is part of sharia law which all part of Islam. do we really want Australia to end up like other countries and yes it is happening look at Lakemba for example.In other countries there are no go zones for people who do not follow Islam. Its is the next generations who will suffer not us as most of may be dead

    • I don’t eat plastic or drink engine oil yet they are halal certified. Instead of critising learn the facts. Fruit, milk all natural product are being certified all for a minority.

  2. Put recipes up that have ingredients that you would find in a pantry not ones that you have to go out an buy most of the ingredients that are not normally kept, these would be costly to make for a loto f people.

  3. I have all the ingredients in my pantry because a have a gluten problem, but what makes it rise? There is no baking powder in the recipe, or have I missed something. Would love to try it, has anyone out there made it already and how did it go.
