Everyone who’s made this dish has said it is their favourite pasta ever… so we just had to share it with you! It’s so creamy and so easy.

This alfredo is not your traditional dish – it’s tastier and has added broccoli, which is a great source of fibre.

  • 170g pasta of your choice
  • 2 chicken breasts, diced
  • 45ml olive oil
  • 2 cups broccoli florets
  • 60ml butter, melted
  • 350ml heavy cream
  • 1 tsp garlic powder
  • 240ml parmesan cheese, grated
  • salt and pepper (to taste)
  • 80ml milk (optional)
  • 60ml parmesan cheese (garnish)

  1. Cook pasta in salted water until a la dente and drain well.
  2. Cook broccoli florets in boiling water for 3 minutes and drain.
  3. In a large saucepan, brown the chicken pieces then remove and set aside.
  4. Melt butter and add cream, garlic powder, salt and pepper. Heat for 2 minutes without boiling. Add parmesan cheese and stir to melt.
  5. Add chicken pieces, cooked pasta and broccoli florets for 10 minutes on simmer. Add milk or a touch of cream for extra sauce.

    • Healthy version from 4 ingredients – pasta, olive oil, garlic and broccoli. Boil broc 5 min add pasta til cooked and strain. In pot oil,and garlic 2 min add broc and pasta stir through. Top with Parmesan cheese if you want to

  2. Yes this is one of my favorites, I prefer the Alfredo to a Carbonara and it allows for a variety of ingredients. I not only use chicken but I also use salmon and sometimes just vegetables. The sauce I use is shop bought and has only 8.4% fat and 3.3% sugar. Bon appetite.

  3. I make this type of pasta regularly – so because we love to have a dollop of cream with dessert I use plain milk and if necessary thicken with cornflour.. totally delicious and not quite so ‘evil’,., LOL Throw anything into it… Chinese 5 spice is nice too… don’t forget some mushrooms! 🙂
