- 250 g boneless skinless chicken breasts or tenderloins
- 1 teaspoon coconut sugar
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- ¼ teaspoon ground ginger
- ¼ teaspoon ground turmeric
- ¼ teaspoon ground cinnamon
- teaspoon chilli flakes (optional)
- 2 medium eggplants
- ¼ cup extra-virgin olive oil
- Sea salt and freshly cracked
- black pepper, to taste
- 1 bunch mint, leaves picked
- 1 pomegranate, seeds removed
- 2 tablespoons eggplant dip, store bought if desired
