Homemade shortbread

Shortbread is truly a classic when it comes to biscuits and most people don’t know just how easy they are to make! Even if you’re not usually a baker, you’ll have no trouble whipping up a batch of these beauties. They’re perfect with an afternoon cuppa and make great gifts, too. If you want to add a little twist to the recipe – especially if you’re giving them as a present – you can add a couple of teaspoons of orange zest for a lovely citrus kick. Wrap them up in clear cellophane with a pretty ribbon and you’re good to go!

Ingredients

  • 125g/4oz butter
  • 55g/2oz caster sugar, plus extra to finish
  • 180g/6oz plain flour

Method

1. Heat the oven to 190°C/375F/Gas 5. Beat the butter and the sugar together until smooth.

2. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick. Cut into rounds or fingers and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.

3. Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.
