There’s nothing better than a quick and easy dessert and this flourless chocolate cake looks absolutely divine! Moist and thick it will be the perfect dessert for any occasion.

  1. 1. 5 cups milk or dark chocolate chips
  2. 1/4 cup butter
  3. 4 eggs

  1. Preheat oven to 175C. Grease and then line a 6-7 inch spring form pan with baking paper. (make sure to grease first and then line with paper because the cake will still stick if pan is only greased.) Place chocolate chips and butter into a microwave safe bowl and microwave at 30 second intervals until completely melted. Make sure to stir in between each of the 30 second intervals until smooth.
  2. Beat eggs at high speed in stand mixer for about 7 minutes until almost triple in volume.
  3. Add 1/3 of egg mixture into melted chocolate and stir in clockwise motion until no egg streaks remain. Repeat with another 1/3 of egg mixture and then again with final third.
  4. Pour batter into prepared pan. Bake for about 22-25 minutes until knife inserted comes out clean.

    • Oh dear, don’t think that you have done much cooking. It’s a cake tin that springs open on the side allowing it to enlarge, thus lift off the cake, wonderful invention, cheers

    • No Melva. I haven’t baked since my children were at school. My youngest is now 38! Thanks for the info! I had no idea

    • Hmmm we’ll see. I’m not really interested in sweet things but I might give it a go for my husband. It’s not like I’ve never baked – I just haven’t bothered for years. Thanks ladies

  2. Maybe a spring form pan, where the bottom comes out! Sounds great, will to try (after I replace my springform cake tin)

  3. Why do American recipes always give measurements in cups instead of weight? Much easier to weigh out butter than try to cram it into a cup.
