Delicious baked blueberry crumble – perfect in every way!

It’s blueberry season! Time to whip up a perfect summer treat: blueberry crumble bars. They taste better than they look. If you’re not a fan of blueberries, you can also use other fresh fruit. It’s easy to substitute with strawberries or peaches if you prefer.

Ingredients

Yield: 24-28 bars

Crust and crumble

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • 3 cups plain flour
  • 1 cup butter
  • 1 large egg, slightly beaten
  • ½ teaspoon vanilla

Filling

  • 4 cups fresh blueberries
  • ½ cup granulated sugar
  • 3 teaspoon cornstarch

Method

  1. Preheat oven to 190 degrees C. Lightly grease a 33 x 23 cm baking pan and set aside.
  2. Prepare crust and crumble: in a medium bowl, combine both sugars, baking powder and flour. Then, using a pastry cutter, cut in butter, egg and vanilla until the mixture is combined and looks like coarse crumbs. Now, pat half of the mixture into the bottom of the prepared pan.
  3. Filling preparation: in a separate bowl combine all of the filling ingredients and stir gently. Sprinkle the blueberry mixture evenly over the crust. Then, crumble the remaining dough over the top of the blueberries.
  4. Bake for 45 minutes or until the top is lightly browned. Remove from oven and allow to cool completely before cutting.
