Potato salads are quite easy to make but experimenting with different ingredients is all part of the fun.

This great, tasty artichoke and potato salad is a winner!


  • 650g potatoes
  • 1/2 cup virgin olive oil
  • 1 tbsp wine vinegar
  • 1 tbsp lemon juice
  • 1 anchovy fillet
  • 1 tsp dijon mustard
  • salt and pepper
  • 1 x 400g can artichoke hearts
  • 4 shallots, thinly sliced
  • 4 hard boiled eggs
  • 3 black olives, slivered


  1. Steam and dice potatoes
  2. Combine oil, vinegar, lemon juice, mashed anchovy fillet and mustard in bowl. Pour over potatoes and let cool.
  3. When ready to serve, layer with chopped eggs, artichokes, shallots and slivered olives. Add whole olives when complete.
