Potato salads are quite easy to make but experimenting with different ingredients is all part of the fun.
This great, tasty artichoke and potato salad is a winner!
- 650g potatoes
- 1/2 cup virgin olive oil
- 1 tbsp wine vinegar
- 1 tbsp lemon juice
- 1 anchovy fillet
- 1 tsp dijon mustard
- salt and pepper
- 1 x 400g can artichoke hearts
- 4 shallots, thinly sliced
- 4 hard boiled eggs
- 3 black olives, slivered
- Steam and dice potatoes
- Combine oil, vinegar, lemon juice, mashed anchovy fillet and mustard in bowl. Pour over potatoes and let cool.
- When ready to serve, layer with chopped eggs, artichokes, shallots and slivered olives. Add whole olives when complete.
