10 minute sugar-free strawberry jam

Whoever said something has to be sugary to be sweet never made skinny strawberry jam. This jam is the perfect recipe to teach the grandkids as it only take 10 minutes in total to whip up.  Spread this guilt-free homemade goodness over toast, biscuits and even on ice-cream!

Ingredients 

  • 2 1/2 cups strawberries
  • 1/2 cup arrowroot powder
  • 1 1/2 tablespoon freshly squeezed lemon juice
  • 2 tbs water
  • 1 vanilla pod (or 2 teaspoon vanilla extract)

Method

Rinse then cut strawberries in to quarters. Place them in to the pot and slowly add the arrowroot powder. Cover with the lid and bring to a boil, stirring lightly until foam forms that should be gently skimmed off the top. Cook for eight minutes and the last minute add lemon and vanilla pods and stir. Enjoy!
