Cereal… on chicken… for dinner…. it sounds ridiculous but this surprisingly tasty recipe is a great way to mix up the routine meals and is so quick and easy to prepare.

  • 2 chicken breasts
  • 1/2 cup milk
  •  2 eggs
  • 3 cups cornflakes
  • 1/2 teaspoon cayenne pepper
  • oil
  • salt and pepper to taste

  1. Sprinkle the chicken breasts with salt and pepper to season.
  2. Combine milk and eggs in a large mixing bowl.
  3. In a separate bowl, crush cornflakes and add cayenne pepper and 1 teaspoon of salt.
  4. To even the thickness of the chicken breast use a kitchen mallet and pound the chicken.
  5. Dip chicken firstly in the egg batter and then cover in the cornflake mix.
  6. Heat about a tablespoon of oil in a fry pan and fry chicken.
  7. Serve with your favourite sides.

  1. I always use Corn Flakes. I buy no name brand and crush them up and leave them in container. Great on chicken also I roll my rissoles in the crumbs to grill

  2. My favourite fried chicken is very simple. Breast fillet sliced across about 1cm thick, hammered, marinated in lemon juice for an hour or so, lightly seasoned and gently fried in olive oil. Served with steamed asian greens with a sprinkle of sesame oil.

  3. Japanese Panko flakes are far far better, corn flakes are soggy
