The caveman diet: paleo date slice

When you live a paleo lifestyle, you eat real food… food that your body is designed to consume. You’ve probably heard paleo referred to as the ‘caveman diet’ before… and no, we don’t wear leopard print all the time (just sometimes). So why caveman? To put it simply, our bodies, our genetics haven’t evolved much since our late ancestors, this means the way we digest and absorb food and nutrients hasn’t changed either. The change from then to now is the introduction of agriculture, Genetically Modified Foods, pesticides, sugar and an endless selection of  ‘food-like products’ readily available.

Paleo Date Slice

Ingredients

  • 2 cups almond meal
  • 1 cup chopped dates
  • 1 cup chopped walnuts
  • 125g butter (you can also use coconut oil)
  • ½ cup coconut sugar (you could do less as the dates are super sweet too!)
  • 1 egg

Instructions

  1. Preheat oven to 180 degrees Celsius and line a 20cm x 20cm slice tin.
  2. In a saucepan melt the ghee and coconut sugar together, allow this to cool slightly.
  3. Add the egg, dates, walnuts and almond meal, mix until well combined.
  4. Press the mixture into the prepared tin and bake for 25-30 minutes.
  5. Allow the slice to cool in the tin and cut into squares.
  6. Enjoy! Store leftovers (if there are any) in an airtight container.

You can freeze this delish slice! When ready to eat allow to defrost or heat in oven, grill or microwave.
