Sweet white chocolate and almond biscuits

Here’s a delicious recipe to fill up the biscuit tin, keeping you set for afternoon tea and ensuring your visitors will be impressed. 

If you’re a white chocolate lover and a nutty fan, this recipe will hit the spot for you! With the perfect combination of white chocolate and almonds, these biscuits ever so crunchy and leave you wanting more.

Ingredients

  • 1 cup butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, firmly packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups quick oats
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups white chocolate chips, or chunks
  • 1 1/2 cup slivered almonds

 Method

1. Preheat oven to 190C.

2. With electric beaters, mix together the butter and sugars until creamy. Add the eggs and vanilla and continue mixing until smooth.

3. Add oats to the mixture along with flour, baking powder, baking soda, and salt. Stir until combined, then stir in white chocolate chips and almonds.

4. Drop tablespoons of dough onto a lined baking tray, spacing them around 2.5cm apart. Flatten each biscuit slightly with a fork.

5. Bake the biscuits for 4 minutes, then rotate the pan, and continue baking 3-5 minutes, until slightly brown around the edges. The centres should be soft but not gooey. Cool completely on wire racks, then store in an airtight container.
