Sweet coconut cheesecake slice

Everything about these sounds amazing. Sweet, a little bit crunchy, and nice and creamy. The perfect taste of cheesecake and slightly crunchy and golden coconut in a lovely slice! It’s perfect for afternoon tea, and certain to impress all of your friends and family next time you’re asked to bring a plate.

Ingredients

  • 1/4 cup unsalted butter melted, cooled completely
  • 1/4 cup granulated sugar
  • 3/4 cup plain flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 package cream cheese softened
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 and 1/2 cups sweetened shredded coconut

Method

1. Preheat oven to 190C.

2. Line a 20cm square cake tin with baking paper.

3. In a large mixing bowl, stir together melted butter and sugar. Add flour, baking soda, baking powder and salt and mix until well combined.

4. Press the mixture into the bottom of the prepared cake tin and set aside.

5. In another mixing bowl, whisk together cream cheese and sugar, then add flour, egg and vanilla and mix well. Stir in coconut.

6. Pour mixture evenly over the crust, then bake for 35 minutes or until the centre is firm and top is golden brown.

7. Cool completely, then slice into squares to serve.
