Shortcut self-saucing pudding

Gooey chocolate with a fluffy sponge.

This amazing self-saucing pudding is so easy you’ll wonder why you haven’t tried it before. Not only is it simple to whip up, it’s ready to eat in under 7 minutes. The centre is just like a self-saucing pudding should be: hot and gooey, while the chocolate sponge surrounding it is light and fluffy. This recipe makes enough for 4, dish up generous scoops into a bowl and serve each with cream or ice cream. Enjoy!

Ingredients

  • 1/2 cup milk
  • 100 g butter melted
  • 1 cup self-raising flour
  • 2 tbs cocoa
  • 1/2 cup caster sugar
  • 1/2 tsp vanilla essence
  • 1/2 cup caster sugar
  • 2 cups hot water
  • 2 tbs cocoa

Method

1. Combine the pudding ingredients in a bowl, mix well. Pour into microwave safe casserole dish. Sprinkle with sugar. Gently pour over hot water. Sprinkle with cocoa. Cook on high for 6½ minutes uncovered in microwave.
