Scrumptious cashew chicken in the slow cooker

 

Cashew chicken is one of those classic dishes that everyone loves. The nutty cashew flavour mixes well with the sauce that has just the right amount of mild spice, and served with plenty of rice, it is filling and satisfying.

Ingredients

  • 4 skinless chicken breasts, diced
  • 1/4 cup plain flour
  • 1/2 teaspoon black pepper
  • 1 tablespoon canola oil
  • 1/4 cup soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons tomato sauce
  • 1 tablespoon brown sugar
  • 1 garlic clove, minced
  • 1/2 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup cashews

Method

1. Combine flour and pepper in resealable food storage bag. Add chicken and shake to coat with flour mixture.

2. Heat oil in a frypan over medium-high heat. Brown chicken for about two minutes on each side, then place in slow cooker.

3. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl and pour over chicken.

4. Cook on low for 3 to 4 hours. Add cashews at the end and stir through.

5. Serve with plenty of hot, white rice.
