Scrumptious banana pancakes… without the sugar!

It’s Shrove Tuesday, and while not everyone is religious, it is a great excuse to make some healthy pancakes!

This recipe is great not only because it involves bananas, but because it’s light on sugar and uses wholemeal flour, both ticks for those watching their calories and heart health.

Makes 12 pancakes

Ingredients

  • Optional: walnuts to top

Method

  1. Mash 1 banana in a bowl – this should be about half a cup’s worth. Then place flour in a separate bowl and make a well in the centre.

  2. Combine buttermilk, eggs, honey and mashed banana in a jug. Pour into the well and whisk until smooth. Stand for 10 minutes.

  3. Spray a large, non-stick frying pan with oil and heat over medium heat. Spoon 1/4 cup batter into pan. Cook for 2 to 3 minutes or until bubbles appear on the surface. Turn. Cook for 1 to 2 minutes or until golden and cooked through.

  4. Transfer to a plate and cover to keep warm. Repeat with remaining batter to make 12 pancakes.

  5. Thinly slice remaining banana. Place pancakes on plates. Top with sliced banana, honey and yoghurt and serve!
