Passionfruit melting moments

Melting moments are a classic, buttery, shortbread type biscuit which are a firm favourite amongst anyone with a sweet tooth. This passionfruit version is a lovely twist on the classic biscuit, giving it a bit of a subtle tart, almost citrusy flavour. 

Coupled with the occasional crunch of passionfruit seed, this version will be your new go-to when it’s time to fill the biscuit tin!

Ingredients

  • 3 passionfruit
  • 250g butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup icing sugar
  • 1 2/3 cup plain flour
  • 1/2 cup cornflour

Filling

  • 80g butter
  • 2/3 cup icing sugar

Method

1. Preheat oven to 160C and line a baking tray with baking paper.

2. Place passionfruit pulp in a sieve and strain juice; put aside for the filling.

3. In a large mixing bowl, beat together butter, vanilla, and icing sugar until creamy. Stir in passionfruit pulp, then stir in sifted flours in two batches.

4. Roll teaspoons of the mixture into balls and place on oven tray, allowing around 3cm between each. Dip a fork into flour, and press down biscuits lightly.

5. Bake for 15 minutes or until biscuits are lightly golden. Allow to cool on tray for around 10 minutes before transferring to a wire rack.

6. For the filling, in a small bowl beat together butter and icing sugar until pale and fluffy, then add the reserved passionfruit juice, continuing to beat until combined.

7. Sandwich two cooled biscuits together with around a teaspoon of filling.
