When it comes to slices there are so many varieties out there, but this chocolate and walnut slice is definitely up there as one of the easiest and the best! The flavours in the base are super tasty thanks to coffee biscuits, coco powder, golden syrup and desiccated coconut, while the top is covered in smooth chocolate. The recipe calls for dark chocolate, but if you’re not a fan you can swap it out for milk chocolate instead. If you’re feeling fancy, decorate the top of each square with a walnut to make it look extra pretty or just enjoy as is!

Ingredients

  • 250g milk coffee biscuits, crushed
  • 1/2 cup (45g) desiccated coconut
  • 1 cup walnuts
  • 1 tablespoon cocoa powder
  • 2 tablespoons golden syrup
  • 240g dark chocolate, plus extra melted chocolate to drizzle
  • 125g unsalted butter
  • 1 egg

Method

1. Line a 20cm x 30cm lamington pan with baking paper. Whiz the biscuits, coconut, nuts and cocoa in a food processor to coarse crumbs. Transfer to a bowl. Melt the golden syrup, 120g chocolate and 2 tablespoons butter in a pan over low heat. Add to crumbs with egg, mix well, then press into pan. Chill until set.

2. Melt remaining chocolate and butter in a small pan over low heat until smooth, then pour over slice. Score top with a knife to form 24 squares. Chill until set.

3. Slice and serve drizzled with extra chocolate if desired.
