Mouth-watering parmesan roasted carrots

Everyone knows that eating lots of vegetables is a vital part of maintaining good health, but it can be difficult to fit enough in, and also to find ways of cooking them that keep them interesting. Sometimes, trying to get your fill of veggies can seem like a chore.

We’re well beyond the days of boring, flavourless, steamed or boiled vegetable much – it’s time to make vegetables more exciting!

Give these parmesan roasted carrots a try next time you need a tasty side dish with a meal. The crispy and cheesy parmesan flavour makes them taste more like a naughty treat than a vegetable. 

They are so delicious and full of flavour, you’ll never go back to steamed carrots again!

Ingredients

  • 8-10 carrots, peeled
  • 2 tablespoons butter, melted
  • 2 teaspoons garlic, crushed
  • 4 tablespoons parmesan cheese, grated
  • 1 teaspoon chopped parsley 

Method

1. Preheat oven to 200c and line a baking tray with baking paper.

2. Combine melted butter and garlic.

3. Place carrots on the lined baking tray, and drizzle all over with butter and garlic mixture.

4. Roast for 20 minutes, rotating carrots halfway.

5. Sprinkle with parmesan, and bake for a further 10 minutes, or until cheese is melted and golden.

6. Garnish with parsley and serve immediately.
