Loaded mashed potato puffs

You might not think it’s possible, but mashed potatoes just got better. These mashed potato puffs are just like little muffins, and make the perfect breakfast on the go, or lunch or snack. 

Using eggs as a binder, they’re full of protein, and you could load them up any way you like or just eat them as they are. Make a batch at the start of the week to save yourself some time. 

Ingredients

  • 4 large potatoes
  • 1 tablespoon butter
  • 100ml milk
  • 4 eggs
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh chopped chives
  • 1 cup grated cheddar cheese, plus 1/2 cup extra
  • ¼ cup grated parmesan cheese
  • 6 rashers bacon, cooked and chopped into small pieces
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon Cayenne pepper
  • Sour cream, chives, and crumbled bacon for garnish

Method

1. Peel and cut potatoes into quarters then boil in a medium saucepan for 15-20 minutes or until tender.

2. Drain potatoes, add butter and milk and mash with a masher or fork until smooth.

3. Preheat oven to 200C and spray a 12 hole muffin tin with nonstick cooking spray.

4. In a large bowl, combine the potato mash, eggs, garlic powder, chives, cheeses, bacon, and peppers. Divide the potato mixture evenly between the muffin holes. Sprinkle extra cheese over the tops, before baking for 35-40 minutes. Allow to cool slightly before removing from the pan.

5. Serve with sour cream, chives, and extra bacon if desired.
