Pasta salads don’t get a lot of credit these days, but their versatility is hard to deny. It can be whatever you want it to be: lunch, a side, or a main course.

A pasta salad is an excellent dish to make a big load of on the weekend to set you up with lunches for the week. It is also the perfect answer when you’re asked to bring a dish to a party or barbecue. They take little preparation, and the best part is everyone loves them.

This one is no exception. It’s healthier than your average pasta salad, using pesto instead of creamy salad dressings without missing out on the flavour, and whole grain pasta. It ticks all boxes; easy to make, has few ingredients, is delicious, and it’s healthy to boot!

Ingredients

  • 375g whole grain fusilli pasta
  • ½ cup spinach basil pesto
  • 250g cherry tomatoes, halved
  • 5 basil leaves, chopped
  • 1/2 cup mozerella

Method

  1. Cook pasta according to package direction and allow to cool.
  2.  Add pesto to the cooled pasta and stir through.
  3. Mix in cherry tomatoes and mozeralla, then garnish with basil leaves.
