Five-ingredient fruit scones

What’s better than scones fresh from the oven, served with plenty of your favourite jam and cream? Easy! These super simple, quick, and scrumptious five-ingredient fruit scones are better!

Perfect for afternoon tea, they beat plain scones hands down. The best part (other than how quick and easy they are) is that you can choose whatever dried fruit you like, whether it’s raisins, or apricots, or perhaps apples – it’s completely up to you and your tastes. Or you could try a mixed fruit scone! 

These Fruit Scones also freeze really well, so if you want to make up a big batch and then put some in the freezer you can!

Ingredients

  • 1 cup dried fruit of your choice
  • 1/2 cup icing sugar
  • 3 cups self-raising flour
  • 1 cup lemonade
  • 1 cup cream

Method

1. Preheat oven to 200C.

2. In a large mixing bowl, place flour, sugar, and dried fruit. Add lemonade and cream and stir until well combined.

3. Turn the mixture out onto a well-floured board and knead with extra flour until smooth.

4. Use your hands to flatten the dough until it’s approximately 3cm thick, then use a floured scone cutter to cut rounds – a floured glass works just as well if you don’t have a scone cutter.

5. Line a baking tray with baking paper, and place the scones on it. Bake for 15-20 minutes, or until golden brown.

6. Serve with jam and whipped cream.
