Easy peasy orange and poppy seed cake

Orange and poppy seed cake is a classic that still pops up a country fairs and kitchens all over the country. This version offers a lovely moist cake with the perfect amount of orange coming through. What’s the best part though? It’s a cinch to make! You only need a few basic ingredients and then everything in thrown into a processor and mixed together. Serve it up with a nice dollop of thickened cream and a dusting of icing sugar!

Ingredients

  • 1 orange roughly chopped
  • 185 g butter melted
  • 3 egg
  • 1 cup caster sugar
  • 1 1/2 cup self-raising flour
  • 2 tbs poppy seeds

Method

1. Preheat oven to 170C. Grease and line an 18 cm cake pan or a loaf tin. Puree whole orange in food processor. Add melted butter, eggs, sugar and mix well. Add flour and poppy seeds and mix until well combined.

2. Bake for approximately 45 minutes or until cooked when tested.
